Koren Grieveson is a distinguished chef best known for her work at Resto, a casual Belgian-French gastropub located at 111 E 29th St, New York, NY. Opened in 2007, Resto became notable for its focus on European-style cuisine, and Grieveson played a pivotal role in its kitchen operations.

Throughout her career, Koren has earned considerable acclaim. In 2008, she was named one of Food & Wine Magazine’s “Best New Chefs,” and in 2010, she won the prestigious James Beard Award for Best Chef: Great Lakes.

Partnership with Renowned Chefs

Prior to her role at Resto, Grieveson made a significant impact as the chef de cuisine at Avec in Chicago, a wine-focused restaurant she helped open in 2003 alongside award-winning chef Paul Kahan. Before that, she worked as sous chef at Kahan’s esteemed restaurant, Blackbird, beginning in 1998. Grieveson remained with Avec until 2012, when she stepped away from daily operations, though she continues to be involved as a partner.

In addition to her restaurant experience, Koren played a role in launching Claudette, a French-inspired bistro in New York City, and held a position there during its early operations.

Military Background and Education

Before embarking on her culinary journey, Koren Grieveson served in the U.S. Army for nine years. This experience instilled in her a strong sense of discipline and attention to detail, qualities that have deeply influenced her approach in the kitchen. After her military service, she trained at the Culinary Institute of America, one of the most prestigious culinary schools in the country.
