She has also appeared in X-Men: First Class, American Wedding, We Are Marshall, The Boat That Rocked, Unknown, and Seeking Justice. Karen Cox, a store manager, gave birth to January Kristen Jones on January 5, 1978, in Sioux Falls, South Dakota. Her father, Marvin Jones, was an exercise physiologist. She was named after the character January Wayne in Jacqueline Susann's novel Once Is Not Enough. It is not unusual for her two sisters to have names that begin with "J." In 1979, her family moved from Sioux Falls to Hecla, South Dakota, but she returned to Roosevelt High School in 1996 when she was in her sophomore year.
As a supporting actor, Jones has appeared in Anger Management, Love Actually, and Dirty Dancing: Havana Nights. She played the wife of a US border officer in Tommy Lee Jones' 2005 film The Three Burials of Melquiades Estrada, which she has said was one of the most creative experiences of her whole career. In the 2006 film We Are Marshall, she played Carol Dawson, the wife of American football coach William "Red" Dawson. In 2014, Jones appeared in the film Good Kill with Ethan Hawke. She played the major female part in Love's Enduring Promise as the eldest child of a pioneer family, who is smitten by a mysterious stranger who saves her father's life. Jones also played Betty Draper Francis, a young suburban housewife and mother, in the AMC original television drama series Mad Men for seven seasons, for which she was nominated for two Golden Globes and one Emmy.
American Wedding, the third film in the American Pie saga, starred Jones as Cadence Flaherty, a role for which she became well-known. Both Steve Stifler and Paul Finch had a crush on her. "Quit Claim" from the Law & Order series featured her as a con artist who fought Assistant District Attorney Michael Cutter's attempts to frame her as an organized crime con artist who was the sole survivor of a real estate swindle. It is also worth noting that she appeared in the British film The Boat That Rocked, which was dubbed Pirate Radio in North America in 2009. At that point in her career, she was a well-known figure.
She came in at an impressive number eighty-two on Maxim's Hot 100 Women in 2002. She appeared on the cover of GQ's "The Hot Issue" in May 2009 and has since appeared frequently in the magazine. The Black Eyed Peas performed on Saturday Night Live with Jones as host on November 14, 2009. In 2011, Jones co-starred with Liam Neeson and Diane Kruger in the film Jaume Collet-Serra's Unknown, and with Nicolas Cage and Guy Pearce in Seeking Justice. She portrayed Emma Frost in X-Men: First Class. Jones also appeared in the Fox sitcom The Last Man on Earth (2015–18) as Melissa Chartres. In Netflix's 2019 comedy The Politician, she played Dylan McDermott's wife, and in 2020, she featured in the Netflix series Spinning Out as a bipolar single mother of two figure skaters.
Jones and Ashton Kutcher were both Abercrombie & Fitch models in the late 1990s and were dating at that time. She was romantically involved with singer Josh Groban from 2003 to 2006. In 2011, she gave birth to a son called Xander, whose father's identity was never made public. Jones is a big fan of Robert Stack and Jim Carrey gave Stack's autograph as a birthday present to her while they were together. Jones has an interest in mysteries, particularly UFO sightings. She has a tattoo of the Latin word "Bellatrix," meaning "warrior," on her forearm.
