Adelstein made his film debut in 1990 with a small role in The Grifters. He went on to appear in various television series throughout the late 1990s and early 2000s, including Cupid, ER, Without a Trace, and Scrubs. In cinema, he took supporting roles in films like Bedazzled (2000), the Coen Brothers' Intolerable Cruelty (2003), Memoirs of a Geisha (2005), and Be Cool (2005).
